Tucked away on the east side of the sprawling Parkway Plaza Hotel is one of Casper’s sweetest secrets.
It’s in that unassuming space, formally a pizza restaurant, where Kirstin Bott has made Frosted Tops into one of Casper’s premiere custom cake and cupcake bakery.
While the Parkway Plaza complex has closed and its future is uncertain, Frosted Tops is preparing to move into a newly-renovated building in the bustling Old Yellowstone District.
“It’s been a lot of fun, it’s a shopping spree,” said Kirstin, who’s been looking into furniture and supplies as her space is built.
“We’re hoping to reopen on our five-year anniversary,” said Kirstin.
The new space will be across the street from the very popular David Street Station splash pad. Kirstin will continue to make cupcakes and custom cakes, but will also add ice cream and other menu items to please a whole new cliental.
Kirstin found her way to custom baking by chance. She’s always been creative, and dressed-up sweets came somewhat naturally.
After obsessing over art in high school and college, she moved on to trade school for goldsmithing.
For several years she worked as a goldsmith, first at the Shane Company in Colorado, and later at Okes Jewelers in Casper.
“I was making cakes on the side for my family,” recalls Kirstin. That led to making cakes for friends and eventually strangers. “I started getting phone calls from people I didn’t know,” said Kirstin. “It was taking over my house.”
“We have a picture of our fridge, and there were like three giant cakes in the refrigerator and nothing else, everything had to go!” said Kirstin.
She needed space, but didn’t envision a store front. Eventually she co-leased the old Barry’s Pizzeria space with two other bakers. As they moved on, she stayed and thrived.
“It just kind of grew,” said Kirstin, who has kept a high profile selling sweets at events around town. She also developed baking classes and rents her store for birthday parties with baking activities.
Eventually she decided it was time for a change. Plans for the new space started months ago, said Kirstin. “We wanted to be more visible.”
She first put a bid on one of the former industrial buildings in the Old Yellowstone District offered by the city. “I was outbid, so that was unfortunate but it might’ve been a blessing,” recalls Kirstin.
While selling cupcakes at the summer Farmers Market in David Street Station, she noticed lease signage on the Mineral Resource Building on the 200 block of South David Street. The building was about to be transformed with a new brick facade and a complete gut rehab inside.
“It was rough looking, but we had a vision for it,” said Kirstin, who with her husband designed and conceived the complete build out from the ground up.
“It’s been a fun process, I’ve never built a business from that point of view.”
Anticipating people looking for refreshments after enjoying the plaza, Kirstin envisioned a warm and welcoming environment.
“I want it to be a space where people can come and do family,” said Kirstin.
Frosted Tops, which is still open at their Parkway Plaza location, plans to open on David Street by around January 9. In time to start the next five years and beyond.
